Hints and tips to keep things running smoothly in the kitchen over the Christmas period.

  • Make sure you have enough staff and back up if any cant be there for any reason
  • Make sure you have a full run through with all the waiting & kitchen team including tasting the menu on offer
  • Collate pre order information at least one week before each event so food orders can be placed and shortages dealt with
  • Set up par stocks if necessary if more than one individual is doing the ordering
  • Set up buying lists for all suppliers with correct codes, product descriptions and prices
  • Create preparation lists for the kitchen and waiting teams so that nothing is forgotten
  • Check all equipment is in full working order with back ups where necessary
  • Remember: thorough planning will maximise profits
