Other Tastes

Oak
Wine that has been aged in new oak wooden barrels undergoes some oxygenation which gives the wine a vanilla or toasty taste. Can be a dominant flavour in wine and gives a creamy rounded feeling in the mouth- the oak flavours can be too strong for lighter foods

Tannins
Mouth drying elements in young full bodied red wines, tannin helps red wine to age and acts as a preservative, it has the same effect on the mouth as a stewed cup of tea. Foods with lots of cream, butter soft cheese and rare red meats suit wines with tannin.

Off-ness
If a wine tastes musty, stale or of drains it is faulty. It is a very distinctive smell and mustnt be confused with other non faulty aromas or flavours.
