- Taste the wines with your team- which ones go with which dishes on the menu
- Store wine at the correct temperature
- Give the wine list with the menu
- Dont keep your customers waiting for their wine
- Practice service- opening, pouring, allowing the customer to taste it
- Correct level- dont under or overfill glasses, room should be left for the wine to breathe in the glass
- Give your customers control- let them pour the wine and offer a replacement when a bottle is near the end
- Champagne & sparkling wine- bottle should be chilled well- twist the bottle not the cork- fill glasses in stages to prevent overspill
